Thai Basil Pork

10 Minute Thai Basil Pork. Super quick on the table and so many flavours!

Serves: 4 Time: 10 minutes


 

Ingredients

  • 450g pork mince

  • 75mls chicken stock

  • pack of basil leaves

  • red chilies, de-seeded & sliced thin (optional)

  • 2 packs of microwave rice, or 50g rice per person

  • 1.5 tablespoons soy sauce

  • 1.5 tablespoons oyster sauce

  • 1 teaspoon sugar

  • 3 tablespoons vegetable oil

  • 2 shallots, thinly sliced

  • 6 cloves garlic, sliced

Method

  1. Heat a wok over medium heat, add the oil, garlic and shallots. Saute for 3 mins before adding the optional chillies, then cook for a further minute.

  2. Next, turn the heat to high and add the minced pork - using a wooden spoon break up the mince and allow it to crisp and cook through.

  3. Next, throw in the sugar, soy sauce, and oyster sauce. Stir-fry for another minute and then throw in the stock - the liquid should cook off fast with your heat high and reduce.

  4. Finally throw in the basil leaves and stir through until wilted. Serve with your cooked rice, and enjoy! Don't forget to save some for lunch tomorrow - just reheat until piping hot.
