20 Minute Sticky Pork Noodles. So quick and easy to make, next time you find yourself reaching for the takeaway menu give your head a wobble! My fakeaway recipes will save you money, time and your waistline.
Serves: 2 (easily doubled) Time: 20 minutes
Ingredients
300g Pork Mince
Handful Coriander, chopped
1 Lime, juiced
4 Tablespoons Ketjap Manis (thicker & sweeter soy sauce)
2 Tablespoon Rice Vinegar
Egg Noodles, 1 Nest per person
1 Red Bell Pepper, sliced
Method
Heat a pan of water to boiling, ready for the noodles.
Next, heat a drizzle of olive oil in a large pan over medium heat. Throw in the minced pork, breaking up the mince with a wooden spoon. Cook until no longer pink, for 5 minutes.
Meanwhile, add the ketjap manis, rice vinegar and the juiced lime in a small bowl and mix well. Set aside for later.
Once the pork has cooked for 5 minutes throw in the peppers and cook for a further 4 minutes. At this point throw in the noodle nests to the boiling water and cook for 4 minutes. Once done, drain and set aside.
Next, throw the sauce you made into the pan and mix everything together well for 1 minute.
Finally, throw in the cooked noodles and combine everything together for a minute or 2. Serve with the chopped coriander on top and enjoy!
