10 Minute Steak Super Bowl. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.
Serves: 4 Time: 10 minutes
Ingredients
2 Tablespoons Olive Oil
½ Onion, chopped into chunks
2 Red Peppers, chopped into chunks
450g Skirt/Flank Steak, cut into strips
½ Lime, juiced
½ Teaspoon Cumin
½ Teaspoon Chilli Powder
2 Packs Of Microwavable Rice
½ Can Black Beans, drained & rinsed
1 Small Can Of Corn, drained
1 Avocado, sliced
Handful of Coriander, finely chopped
Serving Suggestion
Serves 1 portion for dinner and 1 for lunch tomorrow - for 2 people.
Alternatively, halve the recipe.
For Lunch Tomorrow
Save 2 portions and take to work in a tupperware
Alternatively, swap the rice for a wrap and then wrap in tinfoil.
Can be eaten hot or cold.
Method
Heat 1 tablespoon of oil in a large frying pan over medium heat.
Add the onions and peppers to the pan and season. Cook for 5 minutes, then remove from the pan and keep for later on.
Add the rest of the oil to the pan and throw in the steak with the spices and lime juice.
Cook for a minute or so, not stirring too much. I'd recommend leaving the steak slightly pink so it's not chewy for lunch tomorrow.
Once ready, remove the steak from the pan and set aside.
While the steak is resting, whack the rice in the microwave and cook per pack instructions. Also whack the corn & black beans in the microwave for a minute or two.
Once done, divide the rice between 4 bowls, and add the remaining ingredients. Top with coriander and bobs your uncle!
