Speedy & Spicy Stew

15 Minute Roasted Chicken and Veggies. Choose from fish or chicken in this super quick and fresh stew! Yummy



Serves: 2 (easily doubled) Time: 15 minutes


 

Ingredients

  • 1 tbsp olive oil

  • 2 garlic cloves, crushed

  • 1 tsp ground cumin

  • ½ tsp paprika

  • 200g can chopped tomato

  • 1 red pepper, deseeded, cut into chunks

  • 450g white fish fillets, cut into chunks (or make with chicken if you prefer)

  • handful coriander, roughly chopped

  • 1 lemon, cut into wedges

Method

  1. Heat the oil in a saucepan, then tip in the garlic, cumin and paprika and cook for 1 min.

  2. Add 100ml of water and the tomatoes. Bring to the boil, then turn down the heat.

  3. Add the pepper, simmer for 5 mins.

  4. After 5 mins, add the fish, simmer for a further 5 mins (a bit longer for chicken, make sure not pink in the middle before serving)

  5. Serve with a sprinkle of coriander and a wedge of lemon.
