15 Minute Roasted Chicken and Veggies. Choose from fish or chicken in this super quick and fresh stew! Yummy
Serves: 2 (easily doubled) Time: 15 minutes
Ingredients
1 tbsp olive oil
2 garlic cloves, crushed
1 tsp ground cumin
½ tsp paprika
200g can chopped tomato
1 red pepper, deseeded, cut into chunks
450g white fish fillets, cut into chunks (or make with chicken if you prefer)
handful coriander, roughly chopped
1 lemon, cut into wedges
Method
Heat the oil in a saucepan, then tip in the garlic, cumin and paprika and cook for 1 min.
Add 100ml of water and the tomatoes. Bring to the boil, then turn down the heat.
Add the pepper, simmer for 5 mins.
After 5 mins, add the fish, simmer for a further 5 mins (a bit longer for chicken, make sure not pink in the middle before serving)
Serve with a sprinkle of coriander and a wedge of lemon.
