Another great breakfast option, or serve with salad for lunch if you like.
Serves: 2 Time: 25 minutes
Ingredients
1 tbsp olive oil
1 small potato, peeled, chopped
1 onion, chopped
½ courgette, thinly sliced
6 eggs
Method
Heat the oil in a non-stick frying pan and sear the potato and onion over medium-high heat for about 4 mins. Next throw in the courgette and saute for another 4 mins.
In a bowl whisk the eggs and season, then whack the veggies from the pan into the bowl and mix well.
Using the same pan, throw the egg and veg mix back into the pan on a low heat making sure everything is evenly distributed. After about 3 mins, run a spatula around the outer edges making sure it’s not sticking to the pan.
After around 8-10 mins, flip the tortilla, then cook for another 5-6 mins and serve.
