Seekh Kebab Night

10 Minute Kebab Night. Perfect for date night dinner on the table in 10 minutes.


Serves: 2 (easily doubled) Time: 10 minutes

 

Ingredients

  • Little Gem Lettuce

  • 1 Tomato, diced

  • 1 Lime, juiced

  • 80g Natural Yoghurt

  • 2 Tablespoons Mint Sauce

  • 30g Panko Breadcrumbs

  • 1 Teaspoon Chilli Flakes (optional)

  • 1 Tablespoon Garam Masala

  • 1 Shallot, diced

  • 1 Pack Microwaveable Basmati Rice or swap for 1 Small Naan per person

  • 250g Beef Mince

  • 4 Skewers, soaked in water

  • 1 Tablespoon Olive Oil

Method

  1. Heat the grill to high. Then combine the mince, breadcrumbs, chilli, garam masala in a large bowl. Season and mix well.

  2. Divide the mix between the skewers and make 4 sausage shapes. Pop the kebabs on tin foil and under the grill, cooking evenly for 6 minutes.

  3. Meanwhile add the lettuce, shallots and tomatoes to a bowl, toss well and add the lime juice on top along with 1 tablespoon of olive oil. Season and mix well.

  4. In a separate bowl combine the yoghurt, mint sauce and seasoning. Cook the rice per pack instructions or heat your naan.

  5. Serve the rice on plates with the salad and kebabs on top. Drizzle the dressing over and enjoy!
