15 Minute Sara's Tunisian Shakshuka. Originally named Tunisian Shakshuka, I think it's only right we rename this Sara's Shakshuka as she loves it so much and is always posting yummy photos of it, including the one below.
Serves: 4 Time: 15 minutes
Ingredients
4 Eggs
200g Feta Cheese
Handful Parsley, chopped (optional)
1 Mini Pita per person
800g Canned Chopped Tomatoes
800g Canned Butter Beans, drained and rinsed
3 Tablespoons Olive Oil
2 Garlic Cloves, minced
2 Teaspoons Smoked Paprika
2 Teaspoons Ground Cumin
2 Shallots, diced
2 Vegetable Stock Cubes, dissolved in 200ml of boiling water
1 Teaspoon Cayenne Pepper (optional)
Method
Heat a large non-stick pan over high heat, add the olive oil, once hot add the shallots, garlic and cook until softened. Next, add the cumin, paprika, cayenne pepper, season and cook for 1 min.
Meanwhile, add the stock to a deep based pot and bring to boil, add the tomatoes and mix well. When fully warmed through, remove from the heat, add the butter beans and shallots from the other pan, mix well. Reduce the heat and cook for a few mins more.
Next, use a spoon to make 4 wells in the tomato pan, crack an egg into each well and season with salt and pepper. Cover the pan with a lid and cook for 2-5 min or until the eggs are cooked to your liking.
Serve with crumbled feta and a sprinkling of parsley on top, dunk in your pita and enjoy!
