Salt + Pepper Chicken

25 Minute Salt + Pepper Chicken. You'll never order a takeout Chinese again, this is all you need! Lighter on your time, wallet and waist - but heavy on flavour and deliciousness.

Serves: 4 Time: 25 minutes


 

Ingredients

  • 450g Chicken Thighs, cut into chunks

  • 1 Tablespoon Vegetable Oil

  • 3 Garlic Cloves, finely grated

  • 2 Teaspoons Ginger, grated

  • 1 Teaspoon Brown Sugar

  • 1/2 Teaspoon Salt

  • 1 Egg, beaten

  • 30g Cornflour

  • 50ml Vegetable Oil, for frying

  • 50g Rice per person, dry weight or noodles

Spice Rub

  • 1 Teaspoon White Pepper Powder

  • 1/2 Teaspoon Brown Sugar

  • 1/2 Teaspoon Salt

  • 1/4 Teaspoon Chinese Five Spice

Optional Ingredients

  • For the real authentic salt & pepper chinese chicken, you can saute some red and yellow peppers with onion to serve

  • Extra steamed veg of your choice


Method

  1. Combine the top 6 ingredients together in a large bowl, allow to marinate in the fridge while you prep the rest.

  2. Meanwhile, combine all the spice rub ingredients together in another bowl and set aside.

  3. Pop the egg in a bowl, add the marinated chicken and toss well, then add the cornflour to the same bowl and mix well.

  4. Heat a large non-stick pan over high heat. Add the 50mls of veg oil, then when hot begin to fry the chicken off in batches. Making sure they are browned evenly.

  5. Heat the rice according to the package instructions.

  6. Once all the chicken is done, allow to cool slightly. Then sprinkle over the spice rub and mix well. Use as much or as little of the spice as you wish.

  7. Serve the rice/noodles on plates with the salt and pepper chicken on top, and your steamed veggies, yum!
