55 Minute Roast Vegetable and Ham Soup. Bloody beaut, enjoy!
Serves: 4 Time: 55 minutes
Ingredients
PART 1
3 peppers
2 garlic cloves
2 sweet potatoes
1 tablespoon olive oil
2 red onions
1 carrot
1 tablespoon balsamic vinegar
PART 2
5 slices of smoked ham
700 ml stock
1 can of chopped tomatoes
2 tablespoon mixed herbs
Pinch of salt and pepper
Method
Preheat an oven to 250°C.
Roughly chop all of the ingredients in Part 1 and add to a baking tray.
Drizzle the olive oil and balsamic vinegar over the veg and mix through.
Roast the vegetables in the oven for 40 minutes or until cooked. Be sure to give them a shake/stir half way through.
Once the veg is cooked, remove from oven and add to a large pan. Add the ingredients from Part 2 to the pan and simmer for 15 minutes.
After 15 minutes blend with a hand blender and serve.
If exercising, eat with a slice of warm crusty brown bread or brown pitta.
