Ooooff, so easy to make and perfect for a speedy weeknight dinner or to impress your friends!
Serves: 2 Time: 15 minutes
Ingredients
1L veg stock
2 tbsp Tom Yum paste
100ml canned coconut milk
225g chopped tomatoes, canned
100g shiitake mushrooms, roughly chopped
200g large prawns, de-shelled
2 tbsp fish sauce
1 tbsp lime juice
Coriander to garnish
Fresh chilli, to garnish optional
50g rice per person, dry weight
Method
Cook your rice per pack instructions
Pour the stock into a large pot, add the paste and bring to a boil.
Throw in the coconut milk, tomatoes, mushrooms and cook for 5 mins.
Next, throw in the prawns and cook for 1 min on low heat. Season with fish sauce and lemon juice.
Serve with the cooked rice, and garnish with the fresh coriander and extra chilli if you like it hot hot hot.
