Great for weekend lunches or WFH. Recipe serves 4, so halve if you need to.
Serves: 4 Time: 5 minutes
Ingredients
4 tbsp. pesto
4 eggs
1 avocado
4 slices of sourdough, toasted
salt & pepper
Method
Heat the pesto in a non-stick pan over a medium heat.
Crack the eggs into the pan and fry until the eggs are cooked how you like them.
Meanwhile, mash the avocado and divide it equally between the 4 slices of toast.
Place the eggs over the pieces of toast, season with salt and pepper and serve immediately. Easy!
