15 Minute Loaded Veggie Wrap. I do love a healthy wrap - perfect for lunch at home or on the go.

Serves: 4 Time: 15 minutes
Ingredients
1 Tablespoon Olive Oil
1 Garlic Clove, sliced
4 Tortilla Wraps
3 Tablespoons Pesto
3 Tablespoons Of Hummus
1 Red Pepper, sliced
1 Onion, sliced
250g Chestnut Mushrooms, sliced
1⁄2 Aubergine, sliced
1 Large Handful Of Rocket
Method
Heat the oven to 190°C.
Put all the veg and garlic in an ovenproof dish and drizzle the oil on top, toss well. Bake for around 15 mins, until nice and roasted.
Heat the tortillas in the microwave. Once warmed, spread the pesto and hummus down the centre of each wrap, evenly.
Build your wrap with the roasted veg and rocket, fold in one side and roll.
Wrap in tinfoil and take to work with you. Easy!
