45 Minute Jumbo Sausage Rolls. Ooooff what a treat! Better than Greggs.
Serves: 4 Time: 45 minutes
Ingredients
250g Pork or Turkey Mince
2 Tablespoons Olive Oil
1 Onion, chopped finley
100g Spinach
3 Tablespoons Fresh Parsley
2 Egg, beaten (one for the pastry so keep them separate)
270g Ready Made Filo Pastry (usually 7 sheets)
Fresh Green Salad of your choice
Method
Heat the oven to 190°C.
Heat the oil in a large non-stick frying pan, add onion and saute for 3 mins, then add the spinach and allow it to wilt, drain off any excess water then add the mince and stir to cook evenly. Once the meat is cooked, remove from the heat and set aside.
Lay 2 sheets of filo pastry on greaseproof paper. Brush the beaten egg mixture over each layer and make a stack with the rest of the sheets. Start spooning the mixture along one side of the sheet leaving a 3cm border around the edge. Once all the mixture is in place you can start to roll the mixture up, tucking the edges in as you go. Brush some more beaten egg over the pastry and place it in the oven for around 45 mins.
Meanwhile, mix your salad leaves together in a bowl, and drizzle over a vinaigrette dressing if you have one!
Serve with the sausage rolls and enjoy. Can be eaten hot or cold.
