15 minute dish perfect for a weeknight dinner.
Serves: 4 Time: 15 minutes
Ingredients
For the marinade:
1 tsp dried thyme
1 tsp allspice
2 tbsp brown sugar
½ tsp salt
½ tsp pepper
2 tsp garlic powder
½ tsp cinnamon
½ tsp cayenne pepper
2 tbsp olive oil
2 tbsp lime juice
For the chicken and rice:
450g chicken breast, diced
50g rice dry weight per person
1 tbsp olive oil
Handful coriander, chopped to garnish
Lime wedges to garnish
Method
Combine all the marinade ingredients together in a bowl, whack in the chicken and turn to coat in the marinade. Leave to marinate for 15 mins or overnight if possible.
Cook the rice per pack instructions.
Heat the 1 tbsp oil in a pan over medium-high heat, cook the chicken for 8-10 mins until browned and cooked through.
Serve with the rice and extra steamed green veggies of your choice!
