35 Minute Honey Mustard Chicken. Superb recipe for a Sunday, easy and quick to make!
Serves: 4 Time: 35 minutes
Ingredients
1 Tablespoon Olive Oil
8 Bone-in Chicken Thighs, skin removed
2 Onions, finely chopped
350g Parsnips, cut into sticks
300ml Vegetable Stock
2 Tablespoons Wholegrain Mustard
2 Tablespoons Honey
Few Thyme Sprigs
Bunch Parsley, to serve (optional)
Steamed Greens of your choice
Method
Heat half the oil in a large pan with a lid. Brown the chicken until golden, then set aside.
Next, heat the remaining oil, then cook the onions for 5 mins until softened.
Nestle the chicken back in the pan amongst the onions and then add the parsnips.
Mix the stock with the mustard and honey, then pour in. Scatter over the thyme and bring to a simmer.
Cover, then cook for 30 mins until the chicken is tender. Serve with steamed greens and parsley scattered on top.
