High protein lunch or dinner ready in 15 minutes. Great for taking to work too. Remove the cayenne pepper to make it family friendly.
Serves: 4 Time: 15 minutes
Ingredients
450g turkey mince
100g spinach
100g rice
2 tbsp olive oil
1 onion, chopped
2 garlic gloves, minced
1 tbsp tomato puree
1 egg
Spices
1 tsp paprika
1 tsp tumeric
1 tsp oreganp
1/3 tsp cayenne pepper
Method
Cook the rice per pack instructions, then set aside.
Meanwhile, heat the oil in a pan and saute the onion and garlic until softened for 2-3 mins.
Throw in the mince and cook for 5-6 mins, whack in the spices and some seasoning, Stir well, then throw in the tomato puree and mix well again.
Next, add the spinach and rice, stirring until wilted.
Meanwhile, in a small bowl beat the egg then pour into the rice stirring vigorously.
Cook for a further 2 mins until the egg sets and then serve. Yum!
