45 Minute Egg + Chips. Proper home comfort food, all day brekkie vibes.
Serves: 2 Time: 45 minutes
Fresh Ingredients
200g Small Mushrooms
4 Eggs
Other Ingredients
500g Potatoes, diced
2 Shallots, sliced
1 Tablespoon Olive Oil
2 Teaspoons Dried Oregano
Method
Heat oven to 200°C. Throw the potatoes and shallots into a large, non-stick roasting tin, drizzle with the oil, sprinkle over the oregano, then mix everything together well.
Bake for 30-35 mins (or until starting to go brown), then add the mushrooms and cook for a further 10 mins until the potatoes are browned and tender.
Make four gaps in the potatoes and crack an egg into each space. Return to the oven for 3-4 mins or until the eggs are cooked to your liking.
Serve up between the two of you! Comfort food at its best.
