25 Minute Chicken & Sweet Potato Bowls Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.
Serves: 4 Time: 25 minutes
Ingredients
450g Chicken Breast, cut into small chunks
1/2 Tablespoon of any spiced season mix
1 Tablespoon Olive Oil
2 Medium Sized Sweet Potatoes
1 Broccoli Head
1 Pack of Microwave Rice
1 Avocado, sliced
Lime, to squeeze over avocado
For Lunch Mon + Tues
You can make ahead on Sunday
To be eaten hot or cold
Recipe easily halved
Method
Heat the oven to 220°C. Then combine the chicken with the spices and half the oil and leave to marinate for around 5 mins.
Chop the potatoes into even sized chunks and cut the broccoli into similar sized florets and place on an oven tray, drizzling the rest of the oil over them and season.
Put the chicken on a separate tray and bake all ingredients in the oven for around 15 mins.
When the broccoli and chicken is done remove them from the oven and allow the sweet potato to continue cooking for a further 10 mins.
Cook rice per pack instructions.
Once the potatoes are nice and crisp, remove them from the oven and build your meal prep bowls. Easy!
