Banging Brunch

5 Minute Banging Brunch. Packed with protein and literally is bloody banging - perfect for a weekend brunch.

Serves: 2 Time: 5 minutes


 

Ingredients

Fresh Ingredients

  • 1 Ripe Avocado, peeled and de-stoned

  • 2 Eggs

  • 6 Asparagus Spears

  • 1⁄2 Lime, juiced

  • 2 Slices Sourdough

Cupboard Ingredients

  • 1 Garlic Clove, minced

  • 1 Tablespoon Olive Oil

Method

  1. In a bowl, mash the avocados with a fork, add garlic, lime juice, half the oil, seasoning and mix well then pop it in the fridge.

  2. In a small non-stick or griddle pan, heat the remaining oil, when nice and hot pop the bread in and crisp up nicely on both sides.

  3. Meanwhile, in a separate pan saute the asparagus spears for around 3 mins.

  4. Next, fry or poach your eggs to your liking.

  5. To serve, put half of the avo mix onto the toast, add the egg and asparagus on top!
