Avo, Feta & Pomegranate Toast

Veggie breakfast or lunch perfect for the weekend!




Serves: 2 Time: 5 minutes

 

Ingredients

  • 2 slices wholemeal bread

  • 1 avocado

  • 50g feta cheese, crumbled

  • pomegranate seeds

  • Mint leaves to serve, optional


Method

  1. Toast the bread. Meanwhile smash the avocado with a fork and then divide among the bread slices.

  2. Top with crumbled feta, season well and then sprinkle with pomegranate seeds and mint leaves to serve. Yum!
