Veggie breakfast or lunch perfect for the weekend!
Serves: 2 Time: 5 minutes
Ingredients
2 slices wholemeal bread
1 avocado
50g feta cheese, crumbled
pomegranate seeds
Mint leaves to serve, optional
Method
Toast the bread. Meanwhile smash the avocado with a fork and then divide among the bread slices.
Top with crumbled feta, season well and then sprinkle with pomegranate seeds and mint leaves to serve. Yum!
